One of the persistent problems of digital photography when compared to film is that it doesn't get as sharp and deep contrasts. The curve tool in photoshop and other photomanipulation programs can correct this by deepening the darks and brightening the lights while leaving the midtones mostly intact. The resulting curve looks like an s.
